Lemon Chicken Soup: This Greek-style Chicken Lemon Soup is lighter fare than many soups and it’s just right for an easy spring meal. It's simple, full of fresh flavor, and it has only 5.3g net carbs per serving.

Stuffed Pepper Skillet: What’s easier than making stuffed peppers? Making unstuffed peppers, of course! This tasty one pan keto dinner recipe is easy to make and full of classic stuffed pepper flavor.

Chipotle Lime Chicken: We're heading into prime time grilling season, as Spring is warming up. Fire up the grill and whip up this succulent and flavorful Chipotle Lime Chicken. It will make your tastebuds sing.

"Honey" Garlic Pork Bites: These pork bites are easy, delicious, and ready in 30 minutes or less. That’s my kind of recipe! The sticky, garlicky sauce has that sweet and savory thing going on, and it’s a super family-friendly recipe too.


Side dish, breakfast, & dessert

Garlicky Dinner Rolls: These keto dinner rolls are melt-in-your-mouth delicious. Made with buttery fathead dough, they are the perfect low carb side dish for all of your favorite meals.

Lemon Cream Cheese Coffee Cake: This Keto Lemon Coffee Cake is bursting with bright, fresh flavor and has a ribbon of cream cheese right through the center! It features a tender almond flour cake with plenty of lemony tang, and a sweet lemony drizzle.

Chocolate Mousse: This Keto Chocolate Mousse has an incredibly light and airy texture. While it has multiple steps, it’s surprisingly easy to make. Made in the classic French mousse style, it's a decadent sugar-free dessert.

Meal Prep Tips:

  • If you don’t have a grill, or the weather isn't cooperating, you can easily cook the chipotle lime chicken in the oven or in an air fryer. For the oven, bake at 400ºF for 30 to 35 minutes, skin side up. For the air fryer, cook at 400ºF for 20 to 25 minutes. You will need to work in batches for the air fryer..
  • Cook the pork bites quickly. Get the pan and oil nice and hot before adding the pork. You want to sear the outside, to keep the juices in the meat. Make sure to brown them on all sides, which takes 8 to 10 minutes per batch of pork bites.
  • The dough for the garlicky dinner rolls is a little stickier than traditional fathead dough so it helps to have your hands greased when you roll it into balls.
  • The mousse does take raw eggs, as is standard for French mousse. If that’s a barrier for you, please check out my Keto Chocolate Mousse Pie to see how it can be made by heating the egg whites instead.
